Spaghetti Pie

Around this time every year my company fundraises, usually with a bake sale or pot luck, for AIDS Walk Los Angeles. The walk takes place right in my neighborhood and raises millions of dollars every year to support AIDS Project Los Angeles (APLA). This is the 30th year that AIDS Walk has taken place in L. A. and I’ve been fortunate to participate the last five years. It’s incredibly fun (although waking up super early on a Sunday can be tough if you were out late drinking many of Sharde’s apple ginger cocktail the night before), and it always feels great to give back!

So where does spaghetti pie come in? It’s been the most requested dish for the last five years at our fundraising potlucks! It’s so easy, super affordable and must I mention yummy? And what’s more fun than food shaped like pie?!

Preheat oven to 350 degrees. Cook spaghetti according to box directions. Grease 9-inch pie pan. In a large skillet cook the onion, tomato and turkey together until turkey is cooked through and slightly browned.

Once turkey is cooked, add pasta sauce, oregano and basil and cook on low for about 5 minutes then remove from heat.

IMG_1933In a large bowl, combine spaghetti, butter, egg whites and parmesan.

IMG_1934Press spaghetti mixture into the bottom of the pan and up the sides, then top with cottage cheese and sauce mixture.

Bake uncovered for 20 minutes, then sprinkle additional parmesan. Bake for an additional 5 minutes until cheese is melted. Remove from oven, let sit for 5 minutes, then serve!

Spaghetti Pie

Ingredients:

  • 1 tomato, diced
  • 1/2 cup diced onion
  • 1 bunch basil
  • 16 oz ground turkey
  • 8oz (1/2 jar) of pasta sauce
  • 1 tsp oregano
  • 2 egg whites, beaten
  • 1/3 cup parmesan cheese plus additional for sprinkling
  • 2 Tbsp butter
  • 80z (1 cup) fat free cottage cheese
  • 6oz spaghetti

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cook spaghetti according to box directions
