Roasted Garlic, Spinach and Cheddar Tart

This is another gem from the “Pie for Dinner” issue of Bon Appetit. and it does not disappoint! It is a bit of a time commitment, however, but worth every minute. Whether  the you’re in the mood for a cheesy custardy dinner or the perfect centerpiece for brunch, then this is for you. It’s also ridiculously satisfying to eat a pie made of things your boyfriend can’t stand (or is that just me?).

Chicken & Leek Pie

Pie for dinner? Sounds like a plan to me! Once the February, 2015 Bon Appetit came to my door, I’ve been obsessed with all of their pie recipes. During a visit home my mother and I decided to try our hand at the Cock-a-Leeky Pie. It tasted like the most delicious GIANT chicken pot pie. This is now my go-to recipe to warm up my belly on those “frigid” California nights 🙂

Roasted Garlic Broccoli and Cauliflower

 

 

Roasted Garlic Broccoli and Cauliflower

  • Servings: 4
  • Difficulty: easy
  • Print

 

Ingredients:

  • 2 heads of broccoli
  • 1/2 head of cauliflower
  • 4 cloves of garlic, minced
  • 2 shallots, minced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 350 degrees
  2. cut broccoli and cauliflower into medium sized pieces
  3. In an oven safe baking dish combine broccoli, cauliflower, garlic, and shallot.
  4. Coat lightly with olive oil
  5. Add salt and pepper to taste and toss ingredients together
  6. Roast in oven for 1 hour, stirring halfway through cooking
  7. Serve!

Roasted Garlic and Lemon Chicken

IMG_2450As a retail manager, Thanksgiving marks the beginning of the busiest time of year for me. I rarely spend holidays with my family, but I did get to have a quick visit at home last week where we had a faux thanksgiving. My mom and I did some holiday shopping and then spent a few hours in the kitchen making a few favorite recipes and experimenting on an amazing pasture raised organic chicken from TrueCost Farm. We ended up with delicious new dish and a few tweaks for the next time.

Scarboro Fair Wild Rice

Wild rice is a staple in Minnesota. Its hard to go into a grocery store or co-op without encountering the locally grown grain. This recipe is a staple from Lunds’ deli, one of the grocery stores in Minneapolis. Its insanely easy and just as yummy! Its a great dish to warm you up as the weather gets colder.

Pumpkin Pie From Scratch

IMG_2215Now that my favorite time of year is dead (get it? cause Halloween is over and its a holiday about dead things….) it’s time to move on to the biggest eating day of the year: Thanksgiving. While I’m not a big fan of pie, just about everyone else in my life is. From time to time, I like to treat them to a delicious dessert, and this week I decided to try my hand at a pumpkin pie made from scratch. That means no canned pumpkin, no pre-made pie crust and hopefully lots of happy friends!

Mummy Dogs

Halloween is my favorite holiday. Hands down, the best season of the year. Growing up my best friend and I were treated to some amazing Halloween treats when we would come home after school before we went out trick or treating. I’m talking individually carved orange “pumpkins” filled with purple jello, graveyard cake, squid ink pasta; the works!

I throw a shindig every year and the most popular themed snack is the Mummy Dog. It’s so simple yet so rewarding. Hot dogs wrapped in crescent rolls = brilliant.
