Pie for dinner? Sounds like a plan to me! Once the February, 2015 Bon Appetit came to my door, I’ve been obsessed with all of their pie recipes. During a visit home my mother and I decided to try our hand at the Cock-a-Leeky Pie. It tasted like the most delicious GIANT chicken pot pie. This is now my go-to recipe to warm up my belly on those “frigid” California nights 🙂

Slow Cooker Chicken and White Bean Chili
I was in Mammoth Lakes, California, with a group of friends for New Years Eve. We had a great time skiing, snowshoeing, and snowboarding on the short trip. I did not grow up around mountains (we traveled from frigid Minnesota to tropical climates), but I always love going to and seeing the mountains covered with snow. The air is fresh and it leaves me feeling refreshed. This is what I was working with:
One night we made this chicken and white bean chili after a long day on the slopes. This recipe made enough to feed six hungry adults, with some for leftovers. It is healthy and uses my favorite kitchen tool – the slow cooker. We served this chicken chili with the blue cornbread muffins.
Roasted Garlic and Lemon Chicken
As a retail manager, Thanksgiving marks the beginning of the busiest time of year for me. I rarely spend holidays with my family, but I did get to have a quick visit at home last week where we had a faux thanksgiving. My mom and I did some holiday shopping and then spent a few hours in the kitchen making a few favorite recipes and experimenting on an amazing pasture raised organic chicken from TrueCost Farm. We ended up with delicious new dish and a few tweaks for the next time.
Creamy Leek Pasta
Leeks are an underrated vegetable. There, I said it. They are so yummy and not used enough. Whenever I’m in the leeky mood, this is my go-to leek recipe. It’s creamy, cheesy, and most importantly so incredibly leeky! Throw in come chicken and my favorite carb (pasta) and you have a great Friday night dinner.
Coconut Crusted Chicken Tenders
I am so excited it is football season. Since I have NFL Sunday Ticket, I get to watch the Vikings play all the way from the West Coast! Football games are a great excuse for me to make appetizers and I’m taking full advantage. These coconut crusted chicken tenders will make you want to watch all of the games just to have an excuse to eat them. The good news is that you do not even need an excuse because they are baked healthy goodness. They are crispy and all-around amazing. My boyfriend says I get a little dramatic about food sometimes. I don’t know what he means.
Mustard & Rosemary Whole Roasted Chicken
This is the best chicken I’ve ever eaten. Some may say that’s a bold statement, but I love this chicken so much I want to be buried with it in my mouth.
Not only is this dish incredibly delicious, but it’s also incredibly easy to make and it only takes 5 ingredients!
I like to serve this with a side of veggies cooked in the same mustard sauce. I prefer green beans or broccoli, but it works great with root vegetables (potatoes, carrots etc.) as well.
