Wild rice is a staple in Minnesota. Its hard to go into a grocery store or co-op without encountering the locally grown grain. This recipe is a staple from Lunds’ deli, one of the grocery stores in Minneapolis. Its insanely easy and just as yummy! Its a great dish to warm you up as the weather gets colder.
Pre heat oven to 350 degrees. Chop the onion, celery, thyme, sage, parsely and rosemary. In a small or medium saucepan, bring the broth to a boil. I used my mother’s homemade chicken broth (another recipe to come once I can figure it out for myself!) but you can use store bought or even vegetable broth.
Combine all ingredients in an oven safe casserole dish, including broth. Cover and bake in the oven for 1 and 1/2 hours, uncovering for the last 15 minutes. Serve and enjoy!
Scarborough Fair Wild Rice
Ingredients:
- 1 cup wild rice
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 8oz (one package) fresh mushrooms sliced
- 1 tsp fresh sage, chopped
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- 12 oz chicken broth
- 1/2 cup butter
- salt and pepper to taste
Instructions:
- Pre heat oven to 350 degrees.
- In a small or medium saucepan, bring the broth to a boil
- Combine all ingredients in an oven safe casserole dish, including broth
- Cover and bake in the oven for 1 and 1/2 hours, uncovering for the last 15 minutes
- Serve!
