Mini Sweet Potato Bundt Cakes with Cream Cheese Frosting

This cake has a hole in it.  A couple of weeks ago, my sister and I went to our first meeting of the LA Cake Club.  It is just what you think…a group of people get together and share their delicious homemade sweets.  We had a sufficient sugar high by 2 pm, so not a bad Saturday afternoon.  It was hosted at a great organization, the Made by DWC (Downtown Women’s Center).  “MADE by DWC is a social enterprise created by the Downtown Women’s Center to break the cycles of chronic unemployment and homelessness by empowering women to discover talents and develop skills through vocational opportunities, and generates economic and social capital to support programs at DWC.”  I encourage you to visit their website to learn more if you are interested in getting involved.  We met one of the participants and she was so excited to tell us about the organization.  My contribution to the Cake Club were these mini Sweet Potato Bundt cakes.  You know how much I love sweet potatoes and let me tell you, these cakes almost didn’t make it to Cake Club.  They are soooo good. They’re light, moist, and not overly sweet.  Move over pumpkin, these sweet potato cakes can put you out of business.

Supreme Sweet Potato Pie

Sweet potato pie is like the overlooked middle child in the world of fall desserts.  It is not overly sweet and has the nutritional value from the sweet potatoes, yet pumpkin and apple pie get all the love.  Well, I haven’t forgotten about sweet potato pie and you shouldn’t either! I could probably eat one of these myself they’re so good.  Relax, I said could.  My mom made these all the time growing up with a recipe she learned from her mom, who learned the recipe from her mom (you following? That’s coming from my great-grandmother).  Of course, the grandmothers didn’t use a “recipe” per se because they did not use measurements.    Lucky for you, I recreated it with more specific instructions than “a scoop of sugar” and “a few dashes of cinnamon.”  Pick up some sweet potatoes and let’s get baking!

Quinoa Salad with Roasted Rosemary Sweet Potatoes

I can’t believe it is already Labor Day. This summer flew by. However, that means more of my favorite food. No, not pumpkin, although I will share some pumpkin recipes this fall. I mean sweet potatoes! I think I’ve mentioned that sweet potatoes are my favorite food, but if I haven’t, I’m saying it now. Sweet potatoes are my favorite food. I make them sweet or savory depending on my mood.  When I’m feeling savory (and healthy), I make this quinoa salad. I like the versatility of the dish because it is filling enough that a bowl of it is a satisfying meal for lunch or dinner, but you could also use it as a side dish.  After a trip to the Minnesota State Fair this weekend, I may need a detox with this healthy salad. No regrets.

Meatless Monday: Sweet Potato and Black Bean Tacos

I’m making today Taco Monday.  Any day can be a taco day in my book.  Occasionally, we are going to do special “Meatless Monday” posts where we post main dishes that are vegetarian.  Although we typically try to buy the grass-fed, free-range meat, it never hurts to eat less of it.  Meatless Monday does not mean we won’t post meatless dishes any other day of the week, we just are drawing attention to a meatless main dish.  Now, sweet potatoes are my favorite food. I would eat them with everything if I could.  They’re also a superfood, so I’m assuming I don’t have to closely abide by that “everything in moderation” thing… These tacos are quick and easy to make, which makes them a perfect weeknight meal as well.
