I’m a big believer in breakfast. As in, I rarely skip breakfast. Even if I’m running late, I’ll grab something as I’m heading out the door. What better way to start of your morning than to avoid being hangry? Tone It Up posted this banana chia seed recipe just as I was looking for a new make-ahead breakfast. I modify mine a bit from their recipe, but I cannot tell you how amazing these are (also, have you tried TIU’s workouts?!). They’re healthy and make a great light breakfast or mid-morning snack. I love how you can mix up the add-ins just like you would with banana bread. You can top them with sliced bananas, add chopped walnuts or eat them without any add ins. Meet your new favorite breakfast.

Agave Raspberry Scones
I had friends over for brunch on my birthday last week and had a lot of leftover raspberries. I needed a way to finish them before they went bad. Enter the raspberry scone. I could’ve just eaten a bowl of raspberries, but sometimes I like my fruit with a side of carbs. These scones are lightened up by using a combination of butter and vegetable oil, agave nectar instead of sugar, and a combination of whole wheat flour and all-purpose flour. Some scones are too dense and heavy, but these have just the right amount of airiness. These are amazing hot out of the oven and I completely approve of reheating them before eating the leftovers.
Easy Peach Cobbler
Happy Monday, everyone! I hope you all had a great weekend. I had a craving for my mom’s peach cobbler, so I decided to make some for you. My mom always makes the best peach cobbler. She doesn’t use a recipe to create her masterpiece, but it is always amazing and my siblings and I would frequently request it throughout the year. I decided to put a twist on my mom’s peach cobbler, using fresh peaches instead of canned. This fast and easy recipe is mixed all in one bowl and is a great summer dessert. Watch out, mom!
Strawberry Cupcakes with Champagne Buttercream Frosting
What better way to wish America a Happy Birthday than with cupcakes? These boyfriend-approved strawberry cupcakes are light enough for the summer, but sweet enough to satisfy your sweet tooth. These are a great option to take to a Fourth of July barbecue, or to make when you are craving something sweet and fruity. We topped them with blueberries to make sure we had the red, white, and the blue.
