Banana Chocolate Chip Chia Seed Breakfast Muffins

I’m a big believer in breakfast.  As in, I rarely skip breakfast.  Even if I’m running late, I’ll grab something as I’m heading out the door.  What better way to start of your morning than to avoid being hangry? Tone It Up posted this banana chia seed recipe just as I was looking for a new make-ahead breakfast.  I modify mine a bit from their recipe, but I cannot tell you how amazing these are (also, have you tried TIU’s workouts?!).  They’re healthy and make a great light breakfast or mid-morning snack.  I love how you can mix up the add-ins just like you would with banana bread.  You can top them with sliced bananas, add chopped walnuts or eat them without any add ins.  Meet your new favorite breakfast.

Blueberry Protein Pancakes

I didn’t know “protein pancakes” existed until last year.  If you haven’t tried them, you’re missing out. Protein pancakes are an easy and healthy way to get additional protein and recover after a hard workout.  The best part about these? Since they’re healthy, I don’t feel bad eating one of these for dinner one night after a good workout.  An excuse to have pancakes for dinner? I’m in.  You can easily make whatever variation you want.  You can substitute raspberries or other fruit for the blueberries, add dark chocolate chips with the fruit or even just use dark chocolate chips depending on how you feel.

Apple Pie Oatmeal

Want an excuse to eat apple pie for breakfast? I have something close for you. My solution? Apples sautéed in cinnamon, nutmeg, and brown sugar that taste like apple pie filling without the pie crust.  Since oatmeal has a lot of fiber, I am easily full until lunchtime with this breakfast.

Easy Homemade Cinnamon Rolls with Cinnamon Cream Cheese Frosting

I had never made homemade cinnamon rolls before, but I had leftover cream cheese frosting that was destined for some homemade cinnamon rolls. So, I searched for an easy recipe and found this one from Sally at Sally’s Baking Addiction.  I made it and let me tell you. These rolls were AMAZING.  Cinnamon rolls from a can can be good (I’ll admit), but these are another level.  Combined with the cinnamon cream these frosting, they’re unreal. A lot of people like cinnamon rolls around the holidays, so I highly suggest you keep this recipe handy for when that time comes. Your family, friends, and neighbors will love you forever. Let’s do this!

Killer Strata

Do you want to prove to your friends that you can do brunch better? Are you ready for them to bow down at your culinary feet? This strata is the breakfast dish to end all breakfast dishes. Lots of cheese, bacon and bread baked in creamy eggs. Yeah. Eat up suckers (your friends are the suckers here, not you. You made this masterpiece.). My mom introduced me to this delicious strata one fateful winter morning, and it has been a special family treat ever since. Now I’m sharing it with all of you because I’m just that generous.

Biscuit Breakfast Sandwich with Maple Glazed Bacon

Remember those Rosemary Buttermilk Biscuits? Well, unsurprisingly, they make delicious breakfast sandwiches. How does maple glazed bacon sound to you? Yeah, it sounded good to me too.  So I put it on a sandwich.  Once you have the biscuits, this sandwich is really quick to make and so, so good.  Breakfast is the most important meal of the day after all.

Rosemary Buttermilk Biscuits

I have a confession to make to you.  These biscuits have a secret ingredient: whole wheat pastry flour.  I love the flakiness of a good biscuit, but they’re frequently made with lard and I just can’t get over that. This biscuit recipe is lightened up by using the whole wheat pastry flour and leaving out the lard, but it still has the buttery flakiness I love.  They’re reminiscent of the southern biscuits I ate during college in Texas (isn’t that where the Freshman 15 comes from?). There is no wrong way to eat these biscuits.  This recipe is for rosemary buttermilk biscuits, but you can easily omit the rosemary and you’ll have a fantastic buttermilk biscuit recipe.
