Quinoa Breakfast Bowls

Quinoa is healthy and versatile, but I do not eat is as much for breakfast.  Around the holidays, there’s so much baking and dessert-eating that I try to balance it out…a little bit.  So, I made this quinoa breakfast bowl.  This quinoa breakfast bowl is not only filling, but flavorful as well.  And it has bacon. BACON.  You can’t go wrong with bacon.  Toss in whatever veggies you want as well. So easy, so good.

Vegetable Frittata

Sometimes I forget how satisfying a frittata can be.  Aside from being a quick meal, it is a great use to use up vegetables (and anything you want to put in it) that look like they’re getting ready say goodbye.  Have lots of half used veggies you need to cook? Throw them in a frittata!  Can you sauté vegetables? Can you add eggs to said sautéed vegetables? Can you put that combination in the oven? If you answered yes to those questions, you can make a frittata! If you answered no, well, I want to help you.  A frittata is basically a crustless quiche.  Along with the fact that this is not made with heavy cream, this is a much healthier alternative to a quiche.  It is filling enough by itself, but you can also serve it with baby arugula salad or toast.

Biscuit Breakfast Sandwich with Maple Glazed Bacon

Remember those Rosemary Buttermilk Biscuits? Well, unsurprisingly, they make delicious breakfast sandwiches. How does maple glazed bacon sound to you? Yeah, it sounded good to me too.  So I put it on a sandwich.  Once you have the biscuits, this sandwich is really quick to make and so, so good.  Breakfast is the most important meal of the day after all.

Everything but the Kitchen Sink Burrito

One of the few trying things about going on vacation for me is attempting to eat all of my refrigerator’s perishables while also not buying any groceries (rough life, I know). I’m headed out for a week long  hiking trip in a few days so I’ve been eating a lot of weird meals (read leftovers galore!). One of the easiest things to make while simultaneously getting rid of a bunch of stuff in the fridge is a burrito. I’m partial to the breakfast variety. Its not glamorous, but it sure is delicious! It’s one of the easier meals to make with whatever you might have lying around, so here’s what was in my fridge this morning…
