Remember those Rosemary Buttermilk Biscuits? Well, unsurprisingly, they make delicious breakfast sandwiches. How does maple glazed bacon sound to you? Yeah, it sounded good to me too. So I put it on a sandwich. Once you have the biscuits, this sandwich is really quick to make and so, so good. Breakfast is the most important meal of the day after all.
We have a short and sweet Meatless Monday post today – avocado toast! Avocado toast is one of my favorite healthy snacks. It is quick, filling, and healthy. There are many variations you can make too, such as adding other veggies, adding a meat like prosciutto, adding cheese or adding various seasonings. The recipe I’m sharing today is a basic avocado toast recipe that you can build from and this is the standard way I like to eat avocado toast. The recipe can easily be multiplied depending on how many people you’re feeding. If you cut the toast into small pieces, it makes a great appetizer. Note: This recipe can be made gluten free by substituting your favorite gluten free bread.
These turkey, quinoa, and arugula meatballs are a filling and healthy main dish. Serve them with a salad or roasted vegetables on the side and your favorite condiment. I frequently eat these with Trader Joe’s garlic mustard aioli, but also like them with barbecue sauce. Quinoa, a protein and fiber-rich superfood, will keep you full. Haven’t heard of it? The United Nations declared 2013 the International Year of Quinoa (it’s a thing) and you can find numerous articles about its benefits. So, time to get on the quinoa bandwagon if you aren’t on it.
